Equipment:
- Baking tray
- Potato masher
- Mixer
- Grease proof paper
- Skewer
Jam:
- 200g strawberries, chopped without the stems
- 5 basil leaves
- 200g Jam sugar
Method:
- Place the strawberries in a pan
- Mash with the potato masher
- Bring the heat to 105°c
- Sieve out chunks and let it cool
Meringue:
- 240g caster sugar
- 160g egg white
- 1 tsp crème of tartar
- 1 tsp vanilla bean paste
Method:
- Set oven to 120°c
- Warm 240g sugar in a bowl in the oven
- Put the egg whites in bowl and start to mix and when start to peak add the crème of tartar
- Speed the mixer up
- Then add a spoon full of sugar every 60 seconds
- Once all the sugar is added, add the tsp of vanilla bean paste
- Leave to mix for 5 minutes
- Cover the baking tray with grease proof paper
- Heap two spoonfuls of the meringue into six piles
- Take a teaspoon and make a little well in the middle
- Put a teaspoon of jam in the well
- Then take a skewer and swirl the jam and meringue
- Then place in oven for 1 hour 15 minutes
- Turn off oven and allow them to cool in the oven for another hour
- Then make a brew and enjoy!
