George Wood, the head chef from Brix and Bones will be showcasing his skills on The Fire Pit with Tito’s Handmade Vodka stage on XXX.
George specialises in fire-based cooking and whole beast butchery. He consolidated this practice while working with renowned BBQ Chef Neil Rankin for five years. During this period, he worked under Neil as the head chef of Smokehouse N1 (Islington) before opening the esteemed and award winning Temper (Soho) as head chef.
Brix & Bones is George’s first solo project which is entirely his conception. Though this restaurant stems from his ideas, his collaborative nature of working has bred an environment of creativity in which his team are able to contribute to the menu and ethos. George’s passions lie in sustainability; sourcing ethical and foraging wild & local ingredients from specialist suppliers. As well as using the whole animal, George and his team change the menu weekly based on the ingredients in which are available, showcasing them in ever-evolving, seasonal dishes.
